Oatmeal Breakfast Cookies

Ingredients
1½ cups old-fashioned rolled oats, divided
1½ cups oat flour
½ tsp. baking soda
½ tsp. kosher salt
5 Tbsp. coconut oil, melted and cooled slightly
5 Tbsp. honey
½ cup applesauce, room temperature
2 eggs, room temperature, beaten

Directions
Preheat oven to 350° F. Line a baking sheet with parchment paper. In a large bowl, add 1¼ cups oats, oat flour, baking soda, and salt. Whisk to combine. Form a well in center of dry ingredients, and add oil, honey, applesauce, and eggs. Mix to combine. Dough will be very soft. Chill in refrigerator until firm, about 10 minutes.

Using a medium cookie scoop, divide dough into 10 equal portions on prepared baking sheet. With wet fingers, press down gently on each cookie to flatten slightly. Press remaining ¼ cup oats into the tops of cookies.

Bake for 14-16 minutes until golden brown around edges.
